BEANS
Frost Tolerance: Very little.
Bush green beans, (purple varieties turn green when cooked), are one of those vegetable that truly tastes better when fresh-picked. Bush varieties offer gardeners the option of not building trellises.
Pole beans offer home gardeners several advantages over new bush varieties developed mainly for mechanical harvesting. Pole beans produce more in smaller gardens and are easier to harvest.
Fava beans are the only truley frost-tolerant beans. Expect large, meaty beans to eat fresh like tender green lima beans or to dry and store for hearty midwinter soups.
